Paleo Coconut Bread with Sukrin Organic Coconut Flour

This bread makes a lovely hearty loaf, much like cornbread, and is delicious with added dried fruit or dessicated coconut. Enjoy as it is or toasted, with sweet or savoury toppings. A great way of adding extra fibre to your diet! And of course, it's free from gluten and very low in carbohydrates.

  • Combine the wet ingredients in one bowl and the dry ingredients in another, then mix together.
     

  • Place mix in a small greased loaf tin (22.5cm x 12.5cm x 7.5cm) and bake for 40 mins at 350F/180c/GM4.

  • 120g butter or coconut oil, melted
  • 90g Coconut Flour
  • 1 tsp gluten-free baking powder
